Shrimp Fried Rice

This is a pretty basic recipe.  While I wouldn’t say it’s a spectacular oh-my-god-you-gotta-try-it recipe, it’s a good dish for beginners because it’s easy to cook and tasty as well which is what counts.   I haven’t cooked it since my days at Blatch, fifteen years ago.  But I actually remember cooking this meal.  Truth be told, as I write these I notice I can remember cooking each of them.  Even after fifteen years.

Shrimp Fried Rice

Ingredients
  • 1 cup of rice
  • 2 tbsp olive oil
  • 2 green onions
  • 1 cup baby shrimp
  • 10 oz mushrooms (1 can – drained)
  • 3 Tbsp soy sauce
  • 1 cup rice
  • 1 beaten egg
  • salt and pepper to taste

Rinse the rice and cook it using 1.5 cups of water, and set aside. Heat the oil in a pan and sauté the onions and shrimp for a few minutes. Stir in the mushrooms and soy sauce. Add the rice and cook over medium heat for 5 minutes stirring constantly.  Add a little salt and pepper to your own taste. Serve immediately.
